Did What I Ate Wednesday sneak up on anyone else? I find myself dumbstruck that Easter is 4 days away. I am in no way ready. I realized this about 2 o’clock yesterday afternoon and went into panic mode. It may have just been all the coffee I had, but suddenly I felt a little like I was stuck in the trance scene from “Requiem for a Dream”, with slightly less speed, and slightly more vacuuming.
I have started compiling the Easter basket goodies. We tend not to rely on candy, and gather other fun things for the kids’ baskets. *warning, controversial viewpoint ahead, for the get off my internets people* we didn’t teach our son about the Easter Bunny. We did Santa, but no bunny.
Here’s the thing, one man, slaving away with the help of many others, to provide joy all kids, independent of social status or race? Good thing. I think that a giant bunny, with no known affiliation, who somehow conjures up chocolate and trinkets with the flick of his tail; a bunny who scares the hell out of you when you sit on his lap, because a giant rabbit is most everyone’s personal idea of hell? Not a good thing. I can see celebrating the birth of Christ with charity. I cannot see the sacrifice of the Lamb of God celebrated with a giant bunny who somehow lays or craps techinicolor chocolate eggs and would have you eat solid chocolate idols of himself in some sort of creepy unholy communion. (but oh how I love a Reese chocolate bunny or egg…. mmmmm)
Again, I’m on a coffee binge. My brain is hot mess of what the hell. Aren’t you glad I ran 5 miles yesterday and went to BodyPump? Could you imagine if I had MORE energy? On this sneaky WIAW, what did I eat for this energy? Jenn, our fearless WIAW leader, threw out a challenge for us to get 1 cup more veggies every day. You don’t have to tell me twice.

And the dessert to end all desserts, homemade, healthy, chocolate peanut butter eggs NOT laid by a giant, creepy bunny. They got the Captain’s seal of approval. He ate FOUR of them. (2 this morning)

Healthy Chocolate Peanut Butter Egg

Prep Time: 5 minutes
Cook Time: 2 hours (in the fridge)

Ingredients
- 1 cup quick oats
- 1/4 cup real maple syrup
- 1/2 cup creamy peanut butter
- 1/4 cup crunchy peanut butter
- 1/3 cup vanilla almond milk
- 3 tbsp chia seeds
- tsp vanilla extract
- 6 oz dark chocolate, chopped
Instructions
combine the milk and chia and set aside for 10 minutes
heat the peanut butters in a microwave safe bowl for 30 seconds
combine all ingredients save for chocolate and stir
scoop the dough onto a parchment lined sheet and form into eggs
chill for 1-2 hours
melt chocolate in microwave on high in 15 second intervals, stirring in between
using a fork, dip eggs into chocolate, removing excess
set onto a parchment lined sheet and let set
dust with edible gold and sanding sugar
