Happy Friday! Today is a big day for Breakfast to Bed, it’s my one year blogiversary! (from this blog, anyway) Looking back at a year of posts, I realize I didn’t truly find my voice in this blog until I joined FitFluential and I can’t thank them enough. It’s so nice to be a part of such a warm, inviting, and supportive group of fellow bloggers and fitness enthusiasts who want nothing more than to see you succeed. (p.s. you don’t have to be a blogger to be a part of the team!)

I could spend at least three paragraphs musing on the past year’s posts, but instead, I’ll just say that the birth of my daughter far surpassed anything else I could have done this year.

It’s Friday, and at my house that means kicking back, having a glass of wine, and watching the inevitable downward spiral of politicians on the 24 hour news.

I lost 1.5 lbs last week, and in order to keep up my momentum, I plan on limiting my beer and wine, (no more drinking game where you take a drink every time a republican candidate says “Obamacare”, which is probably for the best, as you may end up hospitalized from that one.) I am going to hit the gym tomorrow night, get my sweat on, and making some really good, really healthy meals for my family.

I love going to the gym on Saturday night because NO ONE is there. I have the whole place to myself. I don’t have to worry about people hearing the music I’m playing in my headphones, and judging my Lionel Richie/Nirvana/West Side Story playlist. I don’t have to worry that my shorts and shirt look like they’re from District 12, (you know you have some beat up workout gear, and you know it’s comfortable.) and I don’t have to wait for days for the farking TRX machine. I can very nearly kill myself with it in complete solitude. Seriously, that strap is trying to kill me.

If you’re trying to lose weight, and are unsure about the gym experience, this is a great time to go. I also find that if I *really* workout on the weekend I am less likely to eat that street pretzel or artisinal ice cream, or whatever overpriced, fancy schmancy, NYC hipster food truck is peddling. I just walk on by, knowing that I can make my own fancy schancy, and HEALTHY food at home. Maybe I can convince the cop to give me $12 for a tiny plate of it….ideas ideas

Ginger Glazed Baby Carrots

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients

  • 1 lb peeled baby carrots with tops
  • 1 tbsp butter or earth balance spread
  • 2 tsps extra virgin olive oil
  • 2 tbsp grated ginger
  • 2 tsp brown sugar
  • salt and pepper

Instructions

heat a skillet on medium high

add butter, olive oil, ginger, and brown sugar into the pan

let brown

add in carrots, salt and pepper

saute until crisp-tender, about 7 minutes

serve
