Tonight is the first night of Passover and Good Friday. I am fairly certain NO ONE will read blogs this weekend. That’s all well and good, but if you don’t read MY blog, how could you possibly keep up with my week that has been driven entirely by caffeine and chia? Huh? Could you? NO! That would make me sad. Aren’t you just the teeniest bit interested in whether or not I will entirely self destruct?? More likely I’ll just get a really extreme case of the shakes which will hopefully burn all the matzoh and cadbury calories. How many calories do you burn in an hour of vibrating like a “personal massager”?

Don’t worry, so far I’ve only had one vision where i am approaching a giant, really pale guy dressed as Revolutionary War re-enactor, handing out flyers for a jewelry store. Well, I thought it was a vision; it turns out I was only on Staten Island. If you’ve never been, it’s like the “Twilight Zone” or “American Horror Story” only not as pretty; and the ghosts are dressed as George Washington and Paulie Castellano. Either ghost, you’re getting shot. Musket or Marlin; it’s happening.

Fortunately, the visions held off long enough to allow me to work on my fitness. Although, if I had visions while I was running, I’d be the coolest disturbed person ever. Alas, the closest I ever get, running under the clap and clang of the elevated train tracks, are the books that I listen to, causing me to jump and run for my life. Listening to suspense novels will do that to a person. I’m going to start running with a vial of holy water and silver sword. Can you drink holy water if you get thirsty? I’m not Catholic, so I don’t know the protocol. Is it extra-hydrating because it’s blessed? Seriously-no idea. You’d think it would be EXTRA good for you. Either way, it will repel the vampires long enough for me to get my miles in.

Wait, if you drink the holy water, does it come out in your sweat? So if you’re sweaty and running, and a vampire tries to bite you, does your VERY SWEAT REPEL IT???

Sorry to take you down the rabbit hole, there. I get a little involved in my books. Maybe I should read something NOT supernatural for my next series. It seems I’m on a vampire kick.

Ok, one more thing, do you know what ALSO repels the Nosferatu? Garlic. My favorite ingredient. I just so happen to have a recipe containing garlic right here! You’re welcome, Buffy.

Cornmeal crusted chicken thighs with avocado-tomato relish. These can also be made with crushed matzoh meal, for a tasty Passover treat if you happen to be Ashkenazi. You can also sub cod or mahi mahi if you’re eschewing meat for Good Friday.

Cornmeal or Matzoh crusted chicken thighs with avocado tomato relish

Ingredients

  • 1 lb boneless, skinless, chicken thighs. (DON’T BUY THEM THIS WAY!! learn to butcher your own chicken and reserve the scraps for stock and you’ll save buckets of $$$)

for the marinade

  • 1/2 cup chobani plain yogurt or light vegannaise if you want it to be Kosher
  • juice of half a lemon
  • 1 tsp hot sauce
  • salt and pepper

for the crust

  • 1 cup cornmeal or matzoh meal
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp poultry seasoning
  • cooking spray

for the relish

  • one avocado
  • two plum tomatoes
  • juice of half of one lemon
  • salt and pepper to taste

Instructions

preheat oven to 400F

set a metal cooling rack over a jelly roll pan and spray it with cooking spray

combine all of the marinade ingredients (yogurt, lemon juice, hot sauce, salt and pepper) and the chicken and marinate for at least three hours. (this works best in a zip top bag or shallow, covered dish

whisk together all crust ingredients in a shallow dish and set aside

using tongs, take a piece of chicken out of the marinade and scrape off excess.

coat evenly in crust mixture and set on cooling rack

repeat until finished

spray the chicken with cooking spray and bake for 15 minutes or until a thermometer registers 160F in the center of the meat.

for the relish

dice the tomato and avocado

toss with juice of half of the lemon

add salt and pepper

slice chicken and top with salsa

serve with brown rice and salad
