Goodness Gracious, Granola Gone GaGa.

Yesterday was so.much.fun. It may not seem that chasing a 3 year old around a children’s museum with a near 7 week old in a baby carrier is tons of fun, but it was great. Elijah had a playdate at the Brooklyn Children’s Museum with 2 of his besties. They played in sand, watched turtles be fed, played in an imaginary grocery store and pizzeria, and drove a fake MTA bus. To cap it all off, he got a raptor toy on the way out. The raptor fits nicely in our gigantic dinosaur exhibit under the coffee table. He says he needs more raptors to take on the T-Rex. I agree. That asshat T-Rex totally deserves what’s coming to him. His tail is a real bitch to step on.

Both of our bellies were growling after we left, so we headed to Red Mango frozen yogurt. He fell asleep before we got there, so I LOADED UP BABY. All of MY fave toppings, strawberries, blueberries, and GRANOLA-NO PLAIN NUTS THIS TIME!! Granola all.the.way.

The granola beast inside me was still screaming. I needed more. I wanted Elijah to eat it too. This meant only one possible thing-homemade granola. To be specific–cocoa, pb, nutty granola. Granola gone gaga.

This is a really good, energy dense granola that is perfect for breakfast with milk or yogurt, for a snack before a run, or for dessert on top of ice cream.

 

Chocolate Peanut Butter Granola

Prep Time: 5 minutes

Cook Time: 1 hour

Ingredients (8 servings)

  • 3.5 cups old fashioned rolled oats
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 2 T cocoa
  • 2 T pb (natural, salted)
  • 1/4 nut or canola oil
  • chopped nuts

Instructions

In one bowl combine the chopped nuts and oats. In a second, microwave safe bowl, combine the rest of the ingredients and microwave on high until incorporated. (30 secs) Pour liquids over oats and stir well. Pour onto two, parchment lined baking sheets and bake at 300, tossing every 10-15 minutes for 1 hour.

Now, before I leave you to go run like the wind. I am going to try to run 3 mi sub 27 minutes. I think I am going to work it in intervals of slow jogging and sprinting. After my run, I am going to hit up a Barre Method class. FUN!!! Here is some cuteness to get you through your day.
