I could pretend that today isn’t all about chocolate and flowers, and grand gestures of nonsense developed by chocolate and card companies to celebrate a saint whom no one remembers the true story of: I won’t. It is. Guess what?
I LOVE IT!!!
I don’t care that I’m not even remotely Catholic. I don’t care that I thought Valentine’s day was named after a character in a children’s book until I was 10. I don’t care that my little near-socialist heart falls perilously fast for the gimmicks of the holiday. Ok, so I can’t really have candy, I am allergic to eucalyptus and baby’s breath, and every metal not platinum or 24K gold. I STILL LOVE IT.
I love that I just put a bunch of Valentine’s Day papers in front of the Peanut to make a Valentine for her brother, and after she colors a few strokes, she throws her arms in the air and shouts “YAY!!!” because what’s more awesome than scribbling? I love planning a romantic meal. I love eating that romantic meal. I love knowing that the man doesn’t care that I will still go to the gym on Valentine’s day, and even encourages it.
I even loved making and packaging all the cookies and Valentine’s for my son’s class. (Star Wars Valentines…the ONLY ones he wanted..I take that back. 1st choice was Tardis valentines, as we’ve been watching “Dr Who” the David Tennant years, but I thought maybe the other kids would be confused.)

Microwave Molten Chocolate Cakes
Yes, these puppies are molten, but if you want to increase the crazy chocolate goodness, drop a cherry cordial or kiss in the center before microwaving. You won’t hate it. Fab with some coffee or vanilla ice cream, perhaps port or champagne!! Or just pour the batter all over….never mind.
Microwave Molten Chocolate Cake

Cook Time: 1 minute

Ingredients (4 servings)
- 2 tbsp butter, melted (I prefer salted when working with chocolate)
- 1 egg
- 1/4 cup flour
- 1/4 cup cocoa
- 1/4 cup sugar
- 1/4 cup heavy cream
- 1/2 tsp baking soda
- cooking spray
optional
- cherry cordials
- hersheys kisses
- marshmallows
- powdered sugar
- ice cream
Instructions
combine all ingredients save for egg and stir
when cooler from stirring, stir in egg
pour into 4 sprayed ramekins
drop in optional ingredients like cordials or kisses or marshmallows
microwave 55 seconds for less done 1 minute for more done
serve with ice cream or powdered sugar, hot fudge, salty nuts, etc.
