I would like to start this post with a note of caution. Please be sure and know how long a soup has been turned off before tasting it. Otherwise, you might end up like me, unable to enjoy anything warmer than ice water. Holy hell did that ever hurt! I haven’t any idea if the stock is worth its salt, because my tastebuds are no longer functional.
Apparently, my filter is also off kilter. I may or may not have used the F word to describe my mouth issue to an elderly in-law. Thankfully, they don’t speak English. If I were the Statue of Liberty, welcoming immigrants to our country, my sign would read only: “Just get off the damn boat, already.” That’s me; a diplomat. You’re welcome, America. Be proud.
Let us get to the topic at hand, sugar, which is why you scamps deign to visit my humble spot on the nets on a perfectly respectable Sunday.
Sunday Sweet!!
I am loathe to admit it, but I grew up on all things karo. The syrup was in MANY baked goods I made as a child/tween/teen. Scotcheroos were one of my favorite treats, and I made them fairly often.
I make them no more. They are as far from “natural” or “real” as food gets. This doesn’t prevent me from pining for their sticky sweet goodness. I think it may even drive my desire to nosh on them into stratospheric heights.
I had to make them naturally. I was overcome with need. I was akin to a soldier returning home from deployment knowing that my wife would be lacking undergarments at the hangar. It was overwhelming.
So I did.
I give you, the all-natural, obscenely delicious scotcheroo.
All Natural Scotcheroos

Ingredients (24 bars)
- 4 cups rice crispies
- 1/2 cup creamy natural peanut butter
- 1/2 cup honey
- 1 over ripe banana
- 2 eggs (beaten)
- 1 tsp vanilla
- 1 cup dark chocolate chips
Instructions
preheat oven to 350F
in a saucepan on medium add pb, honey, and a banana until melted and banana browns
turn off heat
mash banana into the cooked mixture
pour over rice krispies and stir until fairly cool
stir in beaten eggs and vanilla
pour into a greased 9″-13″ pan and bake for 20 minutes
when you pull it from the oven top with chocolate chips, let melt, and spread to the edges.
let cool, cut, and serve

Those look amazing. I, too, grew up on a diet of Karo (and Velveeta, and Oscar Meyer, and other wonderful things) and only break it out now for special occasions. Like pie.
There is NO pecan pie without it.
