Ok, so earlier today I was bitching I lost Wednesday, Thursday, and Friday’s post to the ether. Today I re-gained those and lost Sunday and Monday’s post. Without further preamble, here are those recipes.
Pumpkin Protein Mug Cake

Cook Time: 4 minutes

Ingredients
- 3 tbsp canned pumpkin puree
- 2 tbsp creamy peanut butter
- 2 tbsp gluten free flour mix or 1 tbsp oat flour and 1 tbsp almond meal
- 2 tbsp protein powder (I used optimum nutrition vanilla hydro whey)
- 1-2 tsp honey
- 2 tbsp egg whites
- pinch baking soda
- chopped dark chocolate
Instructions
stir all ingredients together until smooth in a bowl
pour into a large mug sprayed with cooking spray
microwave 3-4 minutes on high
Fried Banana Fluffernutter Cookies

Cook Time: 15 minutes

Ingredients (2 dozen cookies)
for the cookies
- 2 overripe bananas
- 1/2 cup butter
- 1 cup dark brown sugar
- 1 tbsp vanilla extract
- 2 eggs
- 1/2 cup peanut butter
- 1 1/2 cup AP flour
- 1 cup quick oats
- 1 tsp baking soda
- 1/2 tsp salt
for the frosting
- 2 cups marshmallow fluff (I buy the all natural kind, feel free to use whatever)
- 1/2 cup soft butter
- 1 tsp vanilla
Instructions
in a large skillet brown the butter and brown sugar together until bubbly
add in the bananas and mash them with a potato masher until super soft
let cool completely
heat oven to 375F
for the cookies
add banana mixture and vanilla to a mixer
add in eggs and beat
add in peanut butter
add in oats and remaining ingredients slowly
drop in 1 tbsp scoops 3″ apart on a silpat or parchment lined cookie sheet
bake for 13 minutes and let cool completely
for the frosting
easy as pie.
beat all three ingredients together in a mixer with whisk attachment for 4 minutes on high
dollop 1 tbsp of frosting on each cookie and place under a high broiler for two minutes
let cool and serve
