Happy What I Ate Wednesday!! Thanks Jenn, for hosting this, you zax, you! BTW, everyone should go be extra nice to Jenn on her blog, she hath injured her toe, and the immobility might injure her brain.
Speaking of injured brains, could someone tell me why the Captain keeps coming up to me and declaring that I eat his “butt sandwich”? I mean really, what the hell goes through little boy’s brains that they come up with “butt sandwich”? The same thing that goes through men’s heads, undoubtedly.
Yesterday, I was super busy with work, so I ate what I could pack without much difficulty. Eating healthy on-the-go used to be a completely foreign topic to me. If I needed to eat quickly, I’d just run through a fast food place, chow down on some fries, and call it a day. I’d just succumb to my ginger pigtailed drug dealer. I’d never thing to pack a baked sweet potato, or jar of homemade granola, fruit, or veggies. Wendy’s is just so easy, right? Save for the fact that my food was organic AND cheaper, and I didn’t feel like a pile of muck after eating it. I felt good. Strong, even. Way better than if I had eaten that butt sandwich offered to me earlier.
From the top, granola (recipe below) sweet potato with yogurt, radish and feta with romaine salad, berries, a peach, and chicken with mustard greens.
I’ll be honest, I dismantled the hell out of that chicken before I ate it, and even then, I couldn’t finish it. It was too…chicken-y. My akita, Brownie, was all too happy to eat my leftovers. That dog is pretty sure I’m a rockstar.
As for the granola. It’s hotter than HELL in NYC. I go outside and I melt. I turn into a Cat puddle. It’s not dainty. It’s disgusting. I am not an attractive sweaty person. I don’t glisten all sexy like. I go from 0-ick in 5 minutes. I’m staying in the AC for the rest of forever, and I’m not turning on my oven. This would normally make granola making difficult, if I weren’t such a stone cold genius, that is.
Stovetop Granola. It works. IF you have a cast iron skillet. Cast iron spreads heat evenly. You might get away with a tri-ply pan, but it’s not as naturally non-stick. I may never make oven granola again. I never make a huge batch, so this was so effing simple and fast, I fear I am ruined for all other granolas.



Stovetop Granola

Ingredients
- 2 tbsp coconut oil
- 1 tbsp earth balance spread or butter
- 1 1/2 cup rolled oats
- 1/3 cup creamy peanut butter
- 1 tsp cinnamon
- 1 tsp almond extract
- 3 tbsp honey
- dash of salt
Instructions
in a large cast iron skillet on medium melt earth balance and coconut oil
spread the oats evenly over the bottom of the skillet
toss until you can smell the oats beginning to toast
sprinkle in cinnamon and salt
turn heat to low
make a well in the middle of the oats in the pan and drop the extract and the peanut butter in the center
when the peanut butter melts, stir in the oats and toast for 10 more minutes
spread on cookie sheet to chill.

















It is so hot in the city!! Seriously, I think that my eyeballs were sweating yesterday. But in other news, your granola looks delicious. Will definitely try it as I’ve been on a granola kick and if I don’t have to turn on my oven, I will be so happy.
