It’s Friday! And while the Today Show is waving it’s “We Support Abusers” flag, by dancing and singing along with Chris Brown’s live performance, you’re probably wondering A: What’s on Good Morning America, and B: What you’re doing this weekend!
I’ve seen Sam Champion (the weatherman from GMA) up close and personal without his shirt on, and I think, if we give him enough uppers, he could take Chris Brown…it’s a nice thought. I’m generally not a “fight violence with violence” type of person, but surviving a bad ex myself; sometimes, I just envision a world where the abused women get to pull out their abusers eyelashes, and tattoo “I have a small penis” on their forehead. Call me petty.
I don’t think I’ll go on some sort of boycott of “Today”, but I am not watching today. There should never be a place in this world where we celebrate abuse by singing and dancing to his music. Do you think he was singing in his head while shoving Rhianna’s face into the window? The dick who thought I was his personal stress-relief ball mostly whistled through his teeth. Every time I hear someone do that now, I instinctively shirk backward. If Chris Brown gets a “Today” feature, does the ass who hit me get a plaque? All he’ll probably get is another DUI.
Off the subject of assholes, because I want to have a good day. I am fairly certain most of you are grilling and cooking out this weekend. I have a super healthy, super delicious dish to bring. You can make it even more low calorie by subbing out some of the potatoes in the potato salad with lightly blanched carrots and broccoli. YUM.
Roasted Potato and Avocado salad with tomato, cilantro, yogurt dressing. This is addictive. Once you make potato salad with roasted instead of boiled potatoes, you’ll never go back. They’re too good.




roasted potato avocado salad with tomato, cilantro, and yogurt dressing

Prep Time: 15 minutes
Cook Time: 40 minutes

Ingredients (10 servings)
- 2 lbs baby red potatoes, quarted
- 1 whole, ripe avocado, diced
- 3 scallions, chopped
- 1/4 red onion, diced
- 1 clove of garlic, mashed
- 1/3 cup chopped cilantro
- juice of half a lemon
- zest of one lemon
- tiny drizzle of ollive oil
- 1/2 cup greek yogurt (I used 0% chobani plain)
- 1/3 cup pureed tomatoes with juices
- 1 tbsp red wine vinegar
- 1 tsp honey
- salt and pepper
Instructions
roast the quartered potatoes with salt and the TINIEST drizzle of olive oil in a 425F oven until cooked and crisp
let cool
in a measuring cup, whisk together tomatoes, yogurt, vinegar, salt and pepper, honey, lemon juice, and lemon zest
combine chopped onions, scallions, avocado, cilantro, and potatoes in a large bowl
toss with dressing
refrigerate and serve.

I LOVE the Today show…like LOVE! But I totally get where you’re coming from. From their POV, he is popular right now and that drives ratings which drives dollars and yadda yadda yadda. What really makes me mad is Rhianna! Why would she EVER do a song with him again? It’s like telling women that it’s okay to go back to people who abuse you. I think if she had made a stronger statement, then Chris Brown wouldn’t be receiving as warm of a welcome as he is now.
And I thought I was the only one boycotting my usual news station this morning because of their disgusting choice in performers.
On a lighter note, I can’t wait to try this salad! Why haven’t I thought of avocado to pump up the creaminess factor in potato salad?
I’m not a fight-violence-with-violence type either, but man, there is no better example of this than what the character Lisbeth Sander does to her abuser(s) in the Steig Larsson trilogy.
As for the recipe? I think using roasted potatoes (rather than boiled) in a salad is brilliant.
It’s probably b/c of my past or whatever, but I feel like if you mention something major like this… comments simply addressing the food and not the other half of this post kind of make me want to scream. Though i’ve dropped bombs in the past and then gotten “YUM KIWIS!!!” comments that drove me to bring a bottle of wine into the bathtub while the cat stands guard.
I’m not okay with the whole Chris Brown thing — and the fact that Rhi is recording songs with him now makes me feel beyond ticked. I’m a big believer that people make mistakes and can change but… he hasn’t had enough time [or really done that much] to redeem himself. bah. end of rant!
oh but MUCHO importante side note — that salad is going on our “to make” list for your visit. Though i’ll prob make it a dozen or so times before you get here. AHHHHH FREAKING MAZING!!!!
Obviously I don’t know Chris Brown or Rhianna personally (nor do I particularly want to) but I’m HORRIFIED that she continues to record music with the man who beat her. What message does that send??? “yeah, he beat the tar out of me but I have to boost my music sales”. I dunno…seems a bit out of whack on both sides. They’re both talented, but I don’t think I’d watch either. On a brighter note, the salad looks GREAT. Love the idea of the tomato puree in the dressing. Nicole Culver linked this recipe on her post so I thought YUM. Well, I can’t eat yogurt (stupid lactose intolerance), but man the Chris Brown thing was great. I completely agree. And although I’ve never been in a physically abusive relationship, I don’t believe in dancing and singing to his “music” anymore either. The way you depicted your feelings on the subject is exactly as I would. I can read your personality through the words you post. Love it and definitely will be following from now on!!
