I have gone past tired and fully into delusional territory.
My great aunt INSISTS I am 1/8th Cherokee, (I have a really HOT GBF who is Hopi, and he says my insane memory is a Cherokee trait, I say it’s a “I’ve memorized 19 gajillion lines” trait) and I am fairly certain my unintentional sleep fast has led to a vision quest, although it could just as easily be my gypsy eastern european heritage, and it’s a wind signal, or it’s the beginning of my downward spiral into extremely early onset dementia. WAIT!!! Maybe, just maybe, it’s the aliens. I really hope they’re gentle with the probing, I’ve thumbed through “50 Shades of Embarrassment”, and I know what less gentle probing can lead to….a trilogy….with handcuffs.
I really hope that it was a vision quest, because I really do think that I should be waited on, hand-and-foot by several men who look as though they might have been chiseled from marble, AND I also think that dinosaur is still following me….nope; it’s certainly dementia.
Because of my sleep walking state, I’ve been buying take-out more often than I normally do, even buying fast food, because it was simply that….fast. I have been ridiculously busy with work, the kids, the blog, training, and everything else, I’m putting myself last. I am pretty sure that’s going to lead to some family discord. If I’m not holding myself together, how in the hell am I meant to brace my family?
So I am challenging myself, and THROWING down the challenge to other blog friends, and all of you scamps. Here is the challenge, 1x5x4x30 I want you to take the time to make ONE healthy, homemade meal a day for at least 5 consecutive days for 4 weeks, that takes no longer than 30 minutes to prepare. You can take off a few days between stretches. Then, blog at least one of these meals a week. (you can just footnote it on another post if you wish!) I will link you up on each friday. If you aren’t a blogger, you can always tweet or instagram the pics, and tag me @CatTBowen, and I’ll do my best to get them on here. (allowances are made for travel, obvie) I feel like this is a good way to get more and varied healthy recipe ideas. So many of us simply blog one aspect of our meals, and this is a good way to get a rounded view of what healthy meals look like to others.

Speaking of Mrs Peas and Crayons, it’s WIAW here at B2B, and I MADE dinner, AND lunch, AND breakfast! I am feeling pretty superior (to myself) right now.
Breakfast was the mug cake from yesterday’s post, lunch was a kale and egg white omelet, dinner was steamed cod, wheatberries with lemon and dijon, and steamed and lightly sauteed broccoli rabe, and snack? Oh yes, that right there is a browned butter, dark chocolate, toffee blondie. That recipe is about to hit you in the mouth.
The blondie/brownie. It’s both and it’s neither. The browning of the butter gives it a richness and a caramel undertone very unlike a traditional brownie. Yet, the richness, the chew, the crumbly top, all scream “brownie” to me.
Brown Butter Dark Chocolate Toffee Blondie

Ingredients
- 1 stick SALTED butter
- 2/3 dark brown sugar
- 1 tbsp vanilla extract
- 1 egg
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 cup flour
- 6 oz chopped dark chocolate
- 4 oz chopped toffee
Instructions

preheat oven to 350F
in a medium saucepan,
melt butter on medium high until medium brown
remove from heat
stir in brown sugar, vanilla, baking soda, baking powder, and flour
stir in chocolate and toffee
pour into ungreased 9″ cake pan
bake 35 minutes or until crackly top and moist.

Everything looks delicious! But I might be afraid to eat from that plate that has the salad on it! I think I would end up dizzy or seasick! I actually do like it, but I think I’d be too mesmerized by the plate to eat!!
