I am now but one day away from #FitblogNYC, the Fitness Magazine Meet and tweet! It’s here in NYC, so packing isn’t necessary. The only thing I’ll be packing is trail mix and a can of whoop ass. The can isn’t for the meet and tweet, it’s for the R train. Seriously, if I see one more man making himself *really* happy, or one more woman with more thong than pants, I’m opening that can. I’m opening that can and sharing all of it with my fellow passengers.
I do have a seriously ridiculous amount of work to complete today, though. I have to make sure my workout clothes are wrinkle free and super cute. I have to figure out what all to take to Massachusetts for the Reebok FitBlog event, and I need to figure out how to mask the fact that I may or may not be ten shades of terrified that the crossfit bit of the event may actually kill me. I really hope they have an AED. I also hope I’m not the only one trained to use one, in the event it is I on the floor.
Ok, so I may be a *bit* mellow dramatic, but for real, have you seen crossfit?????? Those people make the word “intense” sound like a description for docile kittens. They are something more than that. I think the category they’re in is what I like to refer to as “batshit”. They are batshit crazy, and I’m about to join their ranks. I’ll be the one rocking in the corner talking to myself. “they’re all gonna laugh at you, they’re all gonna laugh at you”. If I start singing “The Lion King” to myself, watch out, I’ve gone down a dark tunnel I won’t soon emerge from. There will be show tunes.
On top of all of this awesomeness, tonight I am hosting the #FitBlog twitter chat at 9pm EST. Be sure to join in, we’ll be talking about SUGAR!! I cannot promise I will not make any off color jokes. Often, off color jokes are the only ones I have. Knock knock jokes aren’t my strong suit. Knocked up jokes? Those I can get behind…or under…you know, whatevs.
ON TO LE FOOD!!
Yesterday was MEATLESS MONDAY!!! Hooray!! My favorite day of the week! I was in the mood for something really comforting and delicious. A pizza or a salad wasn’t going to hit the spot. When I asked the Captain what he wanted, his answer was simple; “soup”. Ok, so the Cop LOATHES soup as a meal, so it had to be something more substantial. Looking in my fridge, I found kale, mushrooms, carrots, peppers, and parmesan cheese. I knew that my cabinet held mushroom stock and a variety of beans. My answer was simple-greens and beans stew. Filling, healthy, and delicious. PERFECT!
This stew couldn’t get any easier, and you can pretty much use any green and combination of sturdy veggies you have. Feel free to take liberties. This soup would also be killer with some of these balls.

this recipe is a good use up. Use what you have and create something awesome. If you’re really daring, add a poached egg atop the stew!
bean and kale stew.
Kale, Beans, and Mushroom Stew

Prep Time: 10 minutes
Cook Time: 30 minutes
Ingredients
- 1 box of mushroom or vegetable stock
- 4 oz sliced mushrooms
- the rind of one parmesan cheese wedge
- 3 cups chopped kale
- 1 cup chopped carrots
- 1/2 cup chopped onions
- 4 cloves chopped garlic
- 1 chopped bell pepper
- 1 can cannelini beans
- 1 tsp red pepper flake
- one bay leaf
- 1/2 cup white wine or 2 tbsp lemon juice
- 1/2 box of penne or spiral pasta
- 2 tbsp extra virgin olive oil
- salt and pepper
Instructions
heat the olive oil in a stock pot on medium
add veggies and saute for one minute
add garlic and saute one more minute
toss in bay leaf and red pepper flake
add a bit of salt and pepper
pour in stock
add rind of parmesan
let boil for 10 minutes
remove rind and bay leaf and add pasta
cook until tender
add can of beans
serve
