Did What I Ate Wednesday sneak up on anyone else? I find myself dumbstruck that Easter is 4 days away. I am in no way ready. I realized this about 2 o’clock yesterday afternoon and went into panic mode. It may have just been all the coffee I had, but suddenly I felt a little like I was stuck in the trance scene from “Requiem for a Dream”, with slightly less speed, and slightly more vacuuming.
I have started compiling the Easter basket goodies. We tend not to rely on candy, and gather other fun things for the kids’ baskets. *warning, controversial viewpoint ahead, for the get off my internets people* we didn’t teach our son about the Easter Bunny. We did Santa, but no bunny.
Here’s the thing, one man, slaving away with the help of many others, to provide joy all kids, independent of social status or race? Good thing. I think that a giant bunny, with no known affiliation, who somehow conjures up chocolate and trinkets with the flick of his tail; a bunny who scares the hell out of you when you sit on his lap, because a giant rabbit is most everyone’s personal idea of hell? Not a good thing. I can see celebrating the birth of Christ with charity. I cannot see the sacrifice of the Lamb of God celebrated with a giant bunny who somehow lays or craps techinicolor chocolate eggs and would have you eat solid chocolate idols of himself in some sort of creepy unholy communion. (but oh how I love a Reese chocolate bunny or egg…. mmmmm)
Again, I’m on a coffee binge. My brain is hot mess of what the hell. Aren’t you glad I ran 5 miles yesterday and went to BodyPump? Could you imagine if I had MORE energy? On this sneaky WIAW, what did I eat for this energy? Jenn, our fearless WIAW leader, threw out a challenge for us to get 1 cup more veggies every day. You don’t have to tell me twice.

egg beaters egg whites, kale, mushrooms, and salsa
And the dessert to end all desserts, homemade, healthy, chocolate peanut butter eggs NOT laid by a giant, creepy bunny. They got the Captain’s seal of approval. He ate FOUR of them. (2 this morning)
Make these. Now.

What is YOUR favorite Easter candy?
Did you ever sit on the bunny’s lap? I did-I’ll never recover.

Oh my gosh these look absolutely amazing! That is my favorite treat ever!
I love them too. too much.
Mmm, those peanut butter eggs look fantastic! I love chocolate + peanut butter.
We haven’t told our children about the Easter bunny either, although they do believe in Santa. Not something I consciously thought about to be honest – our Easter chocolate has always come from our parents/relatives/whoever actually gave it, so I just carried on that tradition.
far less creepy, imo.
Those eggs look entirely too delicious to be healthy. I love your viewpoint/opinion on the Easter Bunny. We haven’t taught my son about him persay but have taken him to sit on his lap. I agree though – the bunny kind of freaks me out. I can’t imagine what that must be for little kids!!! =)
the one at SI mall? he’s terrifying. LOL.
Ohh man, these chocolate peanut butter eggs look divine!
thanks!!
My mom has pics of my sister & I, terrified, screaming & in mid-escape from the Easter Bunny–professional pics that she PAID FOR! ugh.
Love love your take on the Easter Bunny vs. Santa! Mine are too old for both now (sniff, sniff), but we never made a big deal out of either & NEVER made anybody sit on a lap that scared them!!!!
I was ter-ri-fied of Santa!!
These look incredible!!! And so easy to make to!
Sooo easy
Uh, just pinned that shit. ( am I allowed to say that on here?)
I routinely swear. It’s a tick.
Those look sooooooo good. Reese’s eggs are my favorite Easter candy, so I know this would hit the spot for me.
I love the idea of homemade peanut butter eggs! Also, you are so right about the Easter bunny- that floppy eared creep
WANT.
is it possible to get turned on by chocolate? because…well that just happened! I must make these eggs!
Totally possible and acceptable. Just remember to call out my name when you eat them.
Those chocolate eggs look amazing!
thank you!!
Pingback: Easter Treats | Peanut Butter Fingers
Hello! I made these this weekend and they were delicious! I saw them on http://www.pbfingers.com and clicked over here. I don’t like dark chocolate, but I decided to use it anyways, and I loved it. I forgot to take them to my parents house for Easter (whoops!
) so I have them in my fridge for a great snack. It was also my first time using chia seeds in anything and they are awesome. Thanks for the recipe!
Chia seeds ARE awesome. I am so glad you liked them!
