Forty Years ago today, my mother in law was kind enough to let my husband be ripped from her loins. Very sweet of her, really. My husband is not too keen on whole “I’m forty” thing. Right up until midnight last night, he was claiming to be 39. At midnight, he was still in denial. This morning he seems resigned to the fact that he has entered another decade. I can make fun of him mercilessly because he is eleven years older than I am. I am sure that in a year and a few months he’ll be doing the same to me as I turn *cough* thirty *cough*. (I just died a little inside from saying that.)
Entering another decade gives you a sort of hard resolve that you hadn’t had the previous year. You want to make better decisions, exercise more, eat better, spend less, save more, spend more time with your family, finally get that Pontiac Firebird you’ve had your eye on (for 2 decades). You might be depressed that you are climbing the inevitable number ladder, but you’re still alive, so well done you. Truly, I don’t see how the cop can improve on this past decade, I mean, he met me in it, what else could he ask for? I mean, sure, this will be the decade he sees his children mature, will be at the peak of his career, and settles into our home, but still.
We’re going to start this decade right. A long family walk, a tour of the playground, and a screening of “Shaun of the Dead”. (I love you, Simon Pegg.) Isn’t killing zombies really the best way to usher in your birthday? I can only think of one way that would be better, but I don’t kiss and tell. (HAHAHAHAH, yes I do!!!) Today I am making him a birthday cheesecake, birthday steak, birthday salad, and birthday boudoir photography. Ok, not really, I got him a fancy stereo/blu-ray system. He says a computer equipment manual IS Chinese porn. Kind of like my idea of foreplay is coming home to a clean house after a run.
First, is breakfast. The Cop LOVES peanut butter, so the choice was simple. Peanut Butter and Jelly Pancakes. (with chia!!) Not only is it the Cop’s bday, it’s also NATIONAL PANCAKE DAY!! VIVA LE FLAPJACKS!

Healthy Peanut Butter and Jelly Pancakes.
- 1 cup whole wheat pastry flour
- 1 cup vanilla coconut milk
- 1 individually sized Chobani raspberry yogurt
- 3 egg whites
- 1/4 cup pb2 powdered peanut butter
- 2 tbsp all natural raspberry jam
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3 tbsp chia
- 1 tbsp coconut oil
sift together dry ingredients.
in a separate bowl, whisk together wet ingredients and chia, set aside for 10 minutes.
combine wet and dry ingredients, if it is feeling really thick, add some more vanilla coconut milk.
pour about 1/3 cup of batter onto med-hot griddle pan, when bubbles form and pop on surface, flip the pancake, cook 2 more minutes.
serve with cooked, macerated, strawberries.
