I had already planned on buying myself “Breaking Dawn” for Valentine’s Day, because really? That’s a gift you should get yourself. It seems wrong for your husband to buy you a dvd of a movie filled with the object of your affection; and it isn’t him. Oh Edward, you undead scamp, you!
If anyone emails me today and gives me crap about the fact that I talk openly about my celebrity crushes while I’m married, I’ll have you know the cop LOVES Jessica Alba. LOVES. He also knows I’m a totally insecure actor and tells me that he thinks I’m way better than her. I also make all his meals and he may be just a smidge fearful that I’ll go on strike or add exlax to his oatmeal. I prefer to believe he really does just love me way more.
I have to admit, I kinda have a girl crush on Jessica Alba. Did you see her at the Golden Globes? zomg. I need her trainer, her stylist, her makeup artist, and probably her gene pool because she is just ethereal. (why wasn’t I born Latina??!!?! Why do I have the flattest ass on the planet??? I DO A MILLION LUNGES AND DONKEY KICKS!!! YOU HEAR ME G-D?? A MILLION!!!) I shall go now and devise a strategy for stuffing my pants. It’s like stuffing your bra, only more squishy.
I once heard Jessica Alba pay partial credit of her beautiful skin on olive oil. That is one strategy I can get behind. It’s a friggen delicious strategy. There are some olive oils that I could drink out of the jar. I bought a particularly deliciously fruity olive oil last week and I wanted to use it in a way that would highlight its fruitiness while transforming it into something more. That’s when I decided that meatless monday would need to focus on beautiful skin as its goal, and olive oil as its star.
I give you, roasted red bell pepper and white bean sauce/dip/spread.
It can be served over pasta, as a spread on sandwiches, (omg on a pressed caprese???) as a dip for pita chips or healthified mozzarella sticks, or warmed up and eaten as a soup. Sooooo good.
Last night I had it over pasta with chopped parsley and parmesan cheese. It.was.divine.
roasted red bell pepper and white bean sauce
Prep Time: 10 minutes
Cook Time: 1 hour 10 minutes

Ingredients (4 servings on pasta, more if u)
- one can of white beans, rinsed
- 4 tbsp extra virgin olive oil
- 1/2 tsp salt
- 12 cloves of garlic
- 2 medium size red bell peppers
- 1-3 tsp red pepper flake
- cracked black pepper
- 1/4 tsp dried basil
- 1/4 tsp dried oregano
- pinch of dried rosemary
- 1 tsp lemon juice
preheat oven to 350F
peel garlic and slice bell pepper.
put garlic and bell pepper in a pouch made of foil
roast for one hour
in the food processor
combine all ingredients
