Chipotle Sweet Potato Dip

Prep Time: 5 minutes (mostly down time)

Cook Time: 1 hour

Ingredients (2 cups)

  • 1 sweet potato
  • 1 tsp honey
  • 1 tsp chipotle powder
  • 2 TBSP peanut butter
  • 1/4 cup vanilla coconut milk
  • dash of sea salt

Instructions

wash the sweet potato and pierce the skin

roast the sweet potato in the skin for 1 hour at 350F (on a sheet pan)

remove from the oven and peel

let sweet potato cool

place sweet potato in food processor with remaining ingredients and puree until smooth.
