I am literally writing this post in the middle of the night. Why, you ask? Because the Peanut thinks 4am is a great time to be silly and play. This is exactly why G-d made babies cute; because otherwise, you’d lose your damn mind. She’s currently rolling around in her crib blowing raspberries and wrapping herself up in her blankets. According to her, this is the funnest thing since she was dropping her toy from her high chair and watching me pick it up over and over and over and over and over again.
No one knows how crappy television is in the middle of the night like nursing mothers. So far I’ve learned that Newt Gingrich lost the Florida primary and apparently doesn’t give a damn, there’s a new magic chopper, someone is doing something on Cinemax which I am pretty sure is illegal in Alabama, and super early news show anchors are approximately 15 years old. It also seems if you take Pfizer birth control, YOU’RE GETTING PREGNANT!! Seriously, they were recalled. Hope you like blogging at 4am!! It’s coming your way!
Today is What I Ate Wednesday thanks to the super sexy Jenn of Peas and Crayons, so I best get on with it. Today’s WIAW will feature a recipe so damn good that I hope it goes viral. I think what they were doing on Cinemax was due to the fact that they got so excited eating this cake.
Breakfast was a real surprise, OATS!!! Hey, at least I put chocolate chips in it for the picture. Coach’s Oats with a lot of water, and sweetened with honey.
Your eyes do not deceive you, it’s basically a bathtub of coffee. Don’t judge.
Lunch was also super creative. PB on whole wheat with honey, carrots, and an apple. I know, you’re riveted.
Dinner was different. I had a salad with Japanese Ginger Dressing and *tried the chicken wings I made. I still don’t like chicken skin, and wings have plenty of it, so I just ate more salad.
You can’t see the tofu chunks, but they’re in there. I could eat pounds of salad in japanese dressing.
after the pump I had a Chobani yogurt, that came as a part of a killer care package from Chobani for my love of all things Cho.
Since it was run AND bodypump, I snacked on THIS.
Does that cake look like a familiar cookie to you? A Samoa cookie perhaps? That’s exactly what it tastes like, too. A Samoa in cake form. A rich, brown sugar cake marbled with a chocolate cake, topped with a dulce de leche coconut buttercream and drizzled with chocolate. It’s positively sinful. I have a thing for girl scout cookies since my mom completely hijacked my ability to be one.
Does this cake have a crapton of steps? yes. Are any of them hard? not remotely. It’s worth all the time you put into it. They’d also be absolutely adorable baked in donut pans!!! I was just too lazy.

Girl Scout Cookie Samoa Cake

Prep Time: 5 hours (mostly downtime)
Cook Time: 1 hour

Ingredients
- For the cake-this is a marble, so you make 2 separate batters.
Batter number 1
- 1 stick of butter, softened
- 1 cup of dark brown sugar
- 2 eggs
- 3/4 cup ap flour
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup milk-WHOLE
for batter #2-This is the HERSHEY’S COCOA RECIPE, NOT MINE.
- 1 cup sugar
- 3/4 cup + 2 T ap flour
- 1/2 cup + 2 T cocoa powder
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1 egg
- 1/4 cup oil
- 1/2 tsp salt
- 1 tsp vanilla
- 1/2 cup boiling water
- 1/2 cup milk
for the frosting
- 1 can of sweetened condensed milk
- 1/2 cup confectioners sugar
- 2 T vanilla extract
- 2 sticks butter, softened
- 1/2 tsp salt
- 1 cup toasted coconut
- topping 1 1/2 cups toasted coconut
- 1/2 cup chocolate chips, melted
Instructions
Before you do anything, either stick the can of condensed milk in your crock pot and submerge it by at least 3 inches and cook it on medium for 10 hours or on high for 7. Alternatively, you can boil it on the stove FULLY SUBMERGED AT ALL TIMES for 4 hours. Let it cool.
Preheat the oven to 350F
these instructions apply to both batters separately
beat liquids/wet ingredients on medium high (except for boiling water in the cocoa cake)
sift in dry ingredients until combined.
(add boiling water for cocoa cake HERE)
Grease and flour the bundt pan WELL
layer the cake pouring some of the brown sugar batter, then cocoa batter, then brown sugar, until both batter bowls are empty.
tap bundt pan to remove bubbles
bake approximately 1 hour or until skewer inserted in center comes out clean
LET COOL ENTIRELY
For the frosting
toast sweetened flaked coconut either on a cookie sheet in the oven on 350F tossing occasionally or in a dry skillet constantly stirring until desired color is reached.
beat cooled cooked condensed milk, butter, confectioners sugar, vanilla and salt for 3 minutes.
add in 1 cup toasted coconut.
chill for 1 hour
frost cake with frosting and top with remaining toasted coconut.
melt chocolate chips in the microwave, place in a pastry bag with a small tip or ziploc bag with a corner cut out about 1/4″ up from the corner, and drizzle stripes on the cake.
EAT!!!

it’s addictive. you can add more cocoa if you like it more chocolate-y. That’s why I mentioned it’s Hershey’s recipe. Some love it, everyone’s had it, everyone tweaks it.

Why do you have to cook the can of condensed milk ?
that is what turns it into dulce de leche. It caramelizes it from the inside. It’s like a magic trick, I swear.

mine was a half batter! use the chocolate cake you love, and the brown sugar cake is really just a white cake with dark brown sugar in place of white sugar with extra vanilla!

No problem! I didn’t use any, but you could use a tsp or 2. I wanted the brown sugar cake to be really brown sugary.

Instead of cooking the condensed milk, could you just use a can of Dulce de Leche?

This is my favourite GS cookie type and I would love to try the cake so long as I’m not going to blow up the kitchen with a tin of milk.
It definitely works! Just make sure it’s ALWAYS well submerged, or do the slow cooker thing.

I wouldn’t melt them and add them in, but you could toss them into some flour and add them to the batter!

Saw this recipe on pinterest and just wanted to save everyone the hassle of cooking the condensed milk for 10 hours..go into your hispanic food section and look for the Nestle dulce de leche can, it comes in a can just like the sweetended condensed milk or in a bottle..if you cant find in the hispanic food aisle check next to the regular baking asile next to sweetended condensed milk.

Making this cake right now. Are the batters suppose to be so thin? Especially the brown sugar one?
They’re relatively thin, but the chocolate batter will be heavier.
Is the icing supposed to be made with butter rather than unsalted butter? It seems really salty to me when I taste tested it.
I used salted butter and really enjoyed the contrast. If you find it too salty, I would say to add a bit more coconut, it should relieve the issue.

I just made this cake yesterday, and it was delicious! The balance between the two different cakes was amazing. The texture of both were perfect as was the coconut and the condensed milk that I let boil for four hours! Everything turned out perfect as I followed your recipe to a tee! I made this cake yesterday and it was amazing. But I made the 1st batter 3x as the first two it did not look right, almost like curdled milk. I followed another recipe for the same thing and it had broken out the steps for the first batter. You just had to do it all at once, you might want to break out to these steps so more people don’t have this problem.
beat butter (or oil) and sugar(s) on medium high until fluffy. Add in eggs one at a time mixing well. Add in milk and vanilla (if applicable) and mix until well combined. In separate bowls sift together dry ingredients for each batter. Add dry ingredients to wet ingredients slowly and mix until well combined.
