I Hope Rats Hate Cashews.

It’s November 28th. It’s going to be 66F today. In NYC.  I was sent a long sleeve running tee to review, and I haven’t even been able to wear it to run. It’s been too hot. To be honest, it’s really bumming me out! I want to curl up by my imaginary fire, drink my real hot cocoa, think about singing Christmas carols, and running in a super cute run vest. NOT shorts. If you’re going to run any more than 5 mi outside right now, you’re doing it in shorts. Lame.

The one thing I look forward to more than anything this time of year; the rats hiding in their hidey holes all of the time without ever coming out; isn’t happening. The rats are RULING these streets. I think they’re chasing me on my run! I see them EVERYWHERE. Why wouldn’t I? They weren’t too busy hiding in their hidey holes to miss out on Thanksgiving leftovers. They were right there, eating sweet potato casserole and stale marshmallows, planning world domination.

By the way, as I am typing, my mac charger has decided to take a crap. I am swearing at my computer loudly. I am getting really crabby, I can feel it.

So before I go on some long diatribe about how I never really liked Steve Jobs anyway (not true) I am going to give you batch #12. I’ll also throw in a lot of emoticons so that you assume I am not about to get really irritated. :):););) {:-)} :-| Are you buying it? I can hear Larry David bitching about that from here.

At batch #12, I was at a loss as to what to make. After scouring my brain and the interwebs for something I wanted to bake. I came up with a load of nothing. I eventually thought of what my husband’s favorite sweet flavors were and stuck them together in a cookie.

Behold the Chocolate Cashew Coconut Dream.

  • 1 1/14 cup flour
  • 1 cup oats (I used Coach’s Oats. if you want a less chewy cookie, use quick oats)
  • 1/4 cup cocoa
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup softened butter
  • 1 egg
  • 1 tsp baking soda
  • 1T vanilla
  • 1 cup chocolate chips
  • 1 cup chopped roasted, salted cashews
  • 1/2 cup sweetened, flaked coconut

Preheat oven to 350F In a mixer on medium low, cream butter and sugar together. Add in egg, vanilla, combine. Add in flour, oats, coconut and combine, stir in chocolate chips and cashews. Scoop onto parchment lined baking sheets 2″ apart from one another and bake for 15 minutes.

Gild the Lily, use dark chocolate chunks.

Go crazy. Make your own sweetened, flaked coconuts.

  1. Seriously, what is the deal with the weather?! I’m not complaining…I’m just shocked! Last year I was freezing my little butt off by this time. Sigh, global warming.

    It’s been really mild here, too – although not 66 mild.

    I have not seen any rodents, other than the mouse that my cat brought me a couple weeks ago (she was so proud! and then so sad when we wouldn’t let her take it inside).

    Cashews = awesome.

    RATS……ahhhhh I would DIE. I saw one in the Subway while I was there and almost passed out. I can’t believe that it is still so warm. Hope things go better:) I love all things with cashews in them!

  6. looks good to me! and I make similar things…throw enough cocoa powder in anything and it will usually taste pretty fabulous :)
