Happy Halloweekend!! Is everyone dressing up? I am so excited to take the kids out. So are they. Well, the captain is. The peanut couldn’t care less. She thinks Halloween is SO lame. Contrarian, that one.
I am just counting down the days until the second to last “Twilight”. You know, in my head, that didn’t sound so pathetic. It’s like when I was 15 waiting for a boy to call. Who are we kidding-you know I called them.
In the meantime, I can’t be the only one obsessed with “American Horror”, right? It just got me from the first damn minute when she sliced his arm with the knife!! I’m pretty sure that I may, in fact, die in there! The young Weaslys completely unrelated ginger twins from that other series of films, are probably plotting a way into my home now, waiting for the right moment to screw up my perfectly stacked glass lockware. A-holes. I plan on re-watching every episode this weekend. (and fast forwarding through some of the weirder, self-love parts)
I also plan on testing at least 6 more Thanksgiving recipes, so be prepared for the onslaught.
In fact, I already have a great, light one, ready for you.
Light and Lovely Sweet Potato Casserole
- 3 large sweet potatoes, roasted and peeled (may be done up to 3 days prior)
- 1/2 cup milk
- 1/2 cup cider
- 1 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/2 tsp vanilla extract
- 1 egg, beaten
- 1 tablespoon butter
- zest of one half of an orange
- 2T honey
- cereal (I used Golden Goddess by Kashi)
Preheat oven to 350F combine all ingredients in a mixer (except for the cereal) and whip until smooth. Pour into a casserole and line the edges with the cereal. Bake until 165F in the center. YUM.
