Funky, Fresh, Friday. Frittata Sandwich

The storm is officially hitting us THE DAY AFTER TOMORROW. Will I get stuck in a museum? Where will the Statue of Liberty end up? WHERE’S JAKE GYLLENHAAL?

I think we’re going to need more milk/bread/tomatoes/goat cheese. Do you think there will be a run on goat cheese? There was a run on D batteries. I had to walk 12 blocks to PC Richard and Son to get them!! (12 blocks, uphill, both ways, in the snow heat.)

Since I bought an absurd amount of eggs ahead of the storm, last night’s dinner was a fritatta BLT on whole wheat.

Sorry for the dark picture. There is very little light during an apocalypse.

Frittata BLT Makes 4 sandwiches

  • 6 eggs
  • 1/2 cup milk
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn (i used fire roasted)
  • 1/2-3/4 cup shredded  2% milk cheese
  • salt and pepper
  • 1/2 t garlic powder
  • whole wheat toast
  • tomato slices
  • baby greens
  • light mayo or mashed avocado

Combine all ingredients and pour into a preheated skillet that you’ve sprayed with EVOO. Let cook on med-high for a few minutes until the edges just start to set. Take off the heat and put in a preheated 350F oven until top is just set. Cut into quarters and assemble sandwiches. Awesome.

  1. Have you checked the library for Jake? If you find him, grab him and take him home. For SAFETY, of course. :) Good luck with your impending apocalypse! I hope you have enough goat cheese and vodka to get through!
